Rava Dosa

Rava dosa


Ingredients
Sooji/Rava (Coarse variety): 1 cup
Rice flour: 1 cup
All purpose flour/Maida: 1/2 cup
Cumin seeds: 1 tsp
Hing: a pinch
Salt: 1 tsp
Chopped green chilli: 1 tablespoon
Chopped ginger: 1 tablespoon
Pepper corns (broken coarsely): 1/2 tsp
Sour buttermilk: 1/2 cup
Water: 4 cups
Onions (finely choped): 1/2 cup(optional)
Cliantro choped: 1 tablespoon


Procedure:
Step1:
Mix rice flour, rava , all purpose flour and salt together


Step2:
Add all the spices and mix well (Cumin seeds, pepper,chilli, ginger,hing)


Step3:
Now add water and buttermilk and mix well.The batter will be of thin consistency unlike usual dosa batter


Step4:
Heat the tawa and pour the batter from the sides and shake the tawa a bit
Note: Add the chopped onions first on the tawa and then the batter. This way the dosa will not stick to the tawa



Step5:
Pour ghee on the sides and cook in medium - high flame for 3-4 minutes.


Step6:
Serve hot with chutney

Badusha

Ingredients
Maida/All purpose flour:1.5 cups
Butter: 1/4 cup
Oil: 1/8 cup
Curd: 1.5 tsp
Sugar: 1/2 tsp
Baking soda: 1/8 tsp
Water:1/4 cup
Oil: to fry


Sugar SyrupSugar: 1/2 cup
Water:1/4 cup
Cardomom powder:1/4 tsp
Lime juice: 1 tsp


Procedure:
Step1:
Beat butter and sugar together


Step2:
Add oil and curd to it and beat well


Step3:
Mix in all the dry ingredients and knead to a pliable dough using water.Approximately knead it for 10 min



Step4:
Prepare the sugar syrup by boiling sugar and water together until it reaches one string consistency.Immediately add cardomom and lime juice to prevent crystalization


Step5:
Divide the dough into 11 equal parts and make into round shape and flatten a little bit.
Note: You can also make it decorative by pinching and twisting the edges. Rak's has uploaded a video for the same



Step6:
Heat oil in a pan and deep fry the badhushas in low medium heat for about 7 to 8 minutes until golden brown



Step7:
Dip the badhushas in sugar syrup and allow to cool

Eggless Banana Bread with yeast

I tried the banana bread with yeast and it turned out to be more flavorful than the quick bread version with baking powder.Though little bit time consuming, it is well worth it


Recipe source: Vegan Baking
Ingredients
Whole wheat flour: 2 and 1/4 cups
Sugar: 1 cup
Banana (ripe long variety) : 3 pureed
Vanilla extract: 1 tsp
Active dry yeast: 1 tsp
Canola oil: 1/2 cup
Warm Milk: 1/2 cup
Salt:1/2 tsp
Cinnamon powder: 1/2 tsp (optional)
Walnuts: 1/2 cup (optional)


Procedure:
Step1:
Mix the yeast and warm milk and let it sit for 10 minutes


Step2:
Puree the bananas


Step3:
Mix all the dry ingredients together (Flour, Sugar and salt)


Step4:
Now add all the wet ingredients and mix well


Step5:
Cover the dough and let it rest for 2 hours to rise


Step6:
Mix the dough again and gently fold in the chopped walnuts


Step7:
Pour the batter into a loaf pan (9" by 5")


Step8:
Let it rise again (approx 1.5 hrs)


Step9:
Bake in a preheated oven of 325F for 1 hour

Corn flour halwa

A delicious halwa that can be made in less than 30 minutes 


Ingredients
Corn flour: 1/2 cup
Sugar: 1 cup
Water:1.5 cups
Ghee: 3 tablespoons
Cardomom powder:1/4 tsp
Cashew nuts: 2 tablespoon
Kesar color: a pinch

Procedure:
Step 1:
Slightly fry the corn flour for 2 minutes

Step2:
Mix water , sugar and corn flour together without forming lumps in a wide pan

Step3:
Add the kesar color as well

Step4:
Heat the pan and stir the mixture continuously in low-medium flame 


Step5:
After 10 min the mixture will start thickening and will have jelly like consistency


Step6:
Add ghee little by little and stir for another 10 minutes until mixture comes off the sides of the pan and also becomes transparent and shiny

Step7:
Pour in a greased tray and allow it cool and then cut it to desired shape.
