BUTTER MURUKKU

This is one of the easiest Murukkus to prepare with store bought rice flour. This is one of the melt in the mouth kind of murukku and a great tea time snack.

Butter Murukku

Ingredients
Rice flour: 1 cup
Besan flour: 2 tablespoons
Fried gram dhal: 1 tablespoon
Butter: 2 tsp
Sesame seeds/cumin seeds: 1 tsp
Asafoetida: a pinch
Salt: 3/4 tsp
Chilli powder: 1/4 tsp (optional)
Water: 3/4 cup (approx)
Oil: to fry

Procedure:

  1. Powder the fried gram dhal in a mixie and sift it
  2. Mix all the flours (rice flour, besan and fried gram dhal powder) with salt, sesame seeds and chilli powder
  3. Add butter and mix well
  4. Now add water and knead to a dough (I used approx little less than 3/4 cup of water)
  5. Using the 3 star disc on murukku maker and place the dough in the maker
  6. Heat the oil. Drop a pinch of dough. If the dough raises immediately to the top, the oil is heated well
  7. Now reduce the flame to medium and pipe the murukkus directly in the oil
  8. Fry until the sound ceases (The sshh sound ceases when all the moisture is absorbed)
  9. Drain the murukku in a tissue.
  10. Repeat with the rest of the dough

Notes:

  • Do not add more butter. The muruku will break
  • Adding fried gram dhal powder, makes the murukku soft and crisp
  • Chilli powder is optional. If adding, do not add more than 1/4 tsp
