POORI PAYASAM

I usually make poori payasam whenever I have left over pooris. This is a very tasty and rich payasam. My mom prepares this often for me as I get to eat more pooris with this payasam. The almonds and the other nuts adds more nutrition to this delicious payasam.

Poori Payasam

Ingredients:
Poori:  2 nos
Milk: 1 cup
Sugar: 1/2 cup
Saffron: a pinch
Cardamom: 3
Almonds: 5 or 6 (Can also use pistachios, cashews. See notes)
Ghee: 1 tsp
Cashews: 3 or 4

Procedure:

  1. Soak the almonds in hot milk , blanch and then grind it to a paste
  2. Soak the saffron also in 1tsp of warm milk
  3. Boil the remaining milk and add the sugar.
  4. Add the ground almond paste and mix well
  5. Tear the poori into small pieces and add to the milk
  6. Add the saffron and powdered cardamom as well
  7. Finally fry the cashews in ghee and it to the payasam

Notes:
There is no hard and fast rule for the measures. Adjust the milk & sugar according to taste
Instead of grinding the almonds, the badam milk mix is available, it can be used.
My mom sometimes soaks cashews, almonds and pistachios together. She also used to mix the ground paste with milk and then filter it.

  5. Poori saagu was a well known combination but I had not heard of poori payasam combination. Saagu would have oil content and poori too would have lot of oil content and hence I would avoid it. However this combination is worth trying!! I have already booked my ingredients on http://qusec.in/. I will surely try this in a day or 2. Thanks for the recipe!!!
