BADAM CAKE | ALMOND MAIDA BURFI

I simply love burfis of any kind. When I saw my cousin posted her picture of Badam Burfi in FB I immediately asked her for the recipe. She promptly replied back with detailed steps.When I made this burfi last week the entire batch was finished the same day. I warn these burfis are highly addictive.It almosts melts in the mouth.The recipe is ridiculously simple and I have written in her own words.
Badam Cake


Preparation time: 20 minutes
Cooking time: 30 minutes
Serves: 16 pieces

Ingredients:
Almond - 1/2 cup
Maida(All pupose flour) - 3/4 cup + 2 tablespoon
Sugar - 1.25 cups
Ghee - 1/2 cup
Water - 1/2 cup
Milk - to grind almonds (approx 2 tablespoons)
Method:
  1. Soak almond in hot water for about half an hour and remove skin. 
  2. Chop and grind to make smooth paste by adding little milk to it.
  3. Fry maida in a dry pan for little time and sieve to avoid any lumps.
  4. In a heavy bottom pan add 2 tablespoons of ghee and fry the maida again. At this stage the color of the maida slightly changes. Transfer it to a bowl and keep aside.
  5. In the same pan add sugar and water and bring it to boil until one string consistency is reached.
  6. Add almond paste to the sugar syrup and mix well without forming any lumps
  7. Cook in low to medium flame till the mixture thickens and does not stick to the sides of the pan.The mixture will become frothy at this stage (In Tamil it is called poothu varuvathu) Don’t leave unnoticed, stir continuously (it takes 15-20 mins approx).
  8.  Remove from fire, add fried maida and remaining ghee little by little. Mix well.
  9. Immediately transfer it to a greased plate and after 15 mins make desired shapes. Once it is cool remove the pieces and store it in a container.
Notes

  • While making shapes if it is too loose ,again transfer it to the pan , cook for some more time and repeat the 8th step.
  • I loved the burfi when it was still warm.
  • If required food color can be added at step 6.
  • I used a 7" baking pan for pouring the burfi

Switch off the flame and mix well with ghee

    We are just roasting the maidha twice, that's it..right? But will it be cooked??

    1. Yes Mahi. maida is roasted twice. First time dry roasted and second time ghee until it changes color.The second time it is fried long so it gets cooked. Also in the last stage it is mized with almond while it is still hot.
