EGGLESS CHOCOLATE AND WALNUT CAKE

I don't know whether it is the crunchiness of the walnuts or flavor of coffee or richness of chocolate, I got addicted to this cake forever. I came across this wonderful recipe from Divya's Easy cooking and is definitely a keeper. It does not have any fancy ingredients but still the cake looks rich, moist and soft and tastes awesome nothing less than brownies.

Eggless Chocolate and Walnut Cake

Ingredients:
All purpose flour/Maida: 1 cup
Sugar: 3/4 cup
Cocoa powder: 1/2 cup
Instant coffee powder: 1/2 tsp
Thick yoghurt/curd: 1 cup
Baking powder: 1.5 tsp
Baking soda: 1/2 tsp
Oil: 1/2 cup
Vanilla extract: 1 tsp
Walnuts chopped: 1/2 cup
Granulated sugar: 1 tablespoon
Chocolate chips: 2 tablespoon (optional)

Procedure:
  1. Preheat the oven to 400F (or 200C)
  2. Chop the walnuts and chocolate chips and keep them ready
  3. Sift together Flour and cocoa powder in a large vessel. Add coffee powder as well.
  4. In another vessel mix curd and sugar and beat well until creamy
  5. Add baking powder, baking soda and vanilla extract to the wet ingredients and mix well
  6. Keep this aside until the wet ingredients bubbles up.
  7. Now add the wet ingredients to the dry ingredients and mix gently until both are incorporated well. Do not overmix
  8. Pour the batter in a greased 8" round or square pan(If required line up the cake tin with parchment paper as we do not want to invert this cake)
  9. Evenly sprinkle the chopped walnut, chocolate chips and sugar
  10. Bake at 400F for 10 minutes
  11. Next bake at around 350F (170C) for 30 minutes or until a tooth pick inserted comes out clean
