VADA PARUPPU | MOONG DHAL KOSUMALLI

This is not the recipe for vada as the name suggests.This is actually a salad using raw moong dhal that is prepared on Rama Navami along with Panakam. This is a very cooling salad and often served chilled. The salad uses the vegetables that are available in the summer season (viz cucumber, raw mango etc).It is also called as Kosambari.
Vada Paruppu

Ingredients
Split yellow Moong dhal: 1/2 cup
Cucumber: 1 large
Raw mango: 1/8 cup
Salt: 1/2 tsp
Grated coconut: 2 tablespoon
Lemon: juice of half lemon
Asafoetida: a pinch
Green chillies: 1 or 2
Curry leaves & Coriander leaves: for garnishing

For tempering
Oil: 1 tsp
Mustard seeds: 1/2 tsp
Urad dhal: 1/2 tsp

Procedure:

  1. Wash and soak the moong dhal in 1 cup of water for half an hour
  2. Meanwhile chop the cucumber and raw mango into small cubes
  3. Heat 1 tsp of oil in a pan and add mustard seeds. Once it starts spluttering add urad dhal,green chillies and curry leaves.Add the asafoetida as well and switch off the flame
  4. Drain the water completely from moong dhal and this to the tempering and mix well
  5. Add salt, mangoes, cucumber,lemon juice and grated coconut and mix
  6. Garnish with chopped coriander leaves
Notes:
Grated carrot can also be added

  15. quick n easy to make salad. Our traditional cooking too has insisted on having salads before our regular meal!!! adding raw mangoes n cucumber makes it very filling!!!
